so far I'm thinking about getting the laptop Joey uses (which I cannot remember at the moment) and getting a dazzler capture card (preferably this one)

If you really want to do digital videos properly and don't have a camcorder already it's best to either get a digital camcorder or a digital tape camcorder than has the ability to feed a recorder program directly without the need of a capture device.
Finally, laptops aren't exactly recommended. Not only are most underpowered but there aren't many focused on video editing that would have a decent value.

Also, this is the laptop you are referring to. Personally, I'd suggest you try to get something with a higher clock speed, as compared to other stuff, 1.6 GHz isn't a lot, and not a lot of stuff can really utilize quad-core to its full potential yet. Although, the only time this has really stopped me is if I really do something processor-intensive, like streaming or recording a graphics-heavy game.
Of course, all that is a moot point, since that laptop is unavailable at this point.
Either way, though, good luck, and do tell me once you start posting videos.

Keep in mind some of the encoders I've used have used four cores however they might not be optimized for them.

The other question is that would your solution end up being fed by a gaming console or is this strictly going to be just filmed?
During the encoding process the computer shouldn't be used at all (disabling screensaver recommended) and plugged in. Nothing mobile about that.

I'd prefer it being obtained off the console (Wii/360) but actually filming it would probably be a secondary option for me.
and I know the computer shouldn't be moved, I'm talking about if I get a capture card and besides, not like I'd use the laptop for (*GASP*) other things

I'd guess that much but it never hurts to double check anything.
I'm slowly getting things covered and thinking of ideas. I haven't done anything like that on a laptop but the biggest hurdles is making sure to get a fast enough CPU if compressing on-the-fly or a decent enough hard drive to prevent dropped frames.

Definitely, it's best not to encode while capturing and do the encoding later (plenty of free tools for that purpose). Hard drive response time is the biggest problem for me - if I leave anything else running that causes paging (basically that causes disk reads) or any sort of anti-virus software I notice little skips. Processor and memory are kind of secondary to write capability, since the card should be doing all the processing anyway.
Here's an example of mine using the card (you can change the quality to 720p): here, but given it's about 2-3 times the price of a Dazzle... probably out of your price range. That aside, if you go with a laptop, a card is obviously not an option.
